The Journal

Slow down. Read something worth your time.

Notes from the roastery. Stories from origin. Thoughts on craft, hospitality, and what it means to build something with intention.

Coffee is rarely just coffee. Behind every cup is a decision — about where the bean was grown, who harvested it, how it was roasted, and why it ended up in your hands.

The KIRN Journal is where we think out loud. We write about the producers we work with, the blends we're developing, the places we visit, and the business we're building. Nothing polished for the sake of it. Just honest writing from people who care about what they do.

From the Roastery

Category 01

From the Roastery

Every coffee we release starts long before it reaches the roaster. We work across a curated range that spans dependable everyday coffees to refined micro-lots and origin-led selections — currently six signature lots, all medium roasted, all traceable, and all built around the same commitment to balance and clarity. Each one earns its place through multiple test roasts, profile adjustments, and cupping sessions before it's approved for the menu.

In this category, we write about what's coming off the drum: new seasonal additions, changes to existing profiles, and the reasoning behind every blend we put our name to. When we add a coffee or retire one, we'll tell you why. If you want to understand not just what we're roasting but how we think about the craft, this is the place to start.

Origin & Sourcing

Category 02

Origin & Sourcing

Our coffees come from Colombia, Brazil, El Salvador, Ethiopia, and Papua New Guinea — each selected not just for flavour, but for the clarity of its story. We work with producers and focus on each stage of the supply chain to deliver honest traceability: a named region, a known process, a varietal with a reason behind it. The people and places behind every harvest deserve more than a line on a label.

In this category, we go deeper on the farms, co-operatives, and growing regions that shape what ends up in your cup — from the high-altitude Nariño hillsides of Colombia to the Santa Ana Volcano soils of El Salvador. Sourcing decisions are never purely commercial. They reflect what kind of roastery we want to be, and this is where we make those values visible.

Hospitality & Craft

Category 03

Hospitality & Craft

We work with coffee shops, restaurants, and hospitality spaces across the UK, and we take long-term responsibility for the coffee programs we become part of. That means equipment from trusted partners including La Marzocco, Mahlkönig, Sanremo, and Victoria Arduino — installed, trained, and serviced by our team. It means hands-on barista training tailored to each venue, built around consistency and staff confidence. Equipment, people, and coffee, considered together rather than in isolation.

In this category, we write about what good coffee service actually looks like in practice: the standards we hold ourselves and our partners to, what we've learned across different service environments, and how we think about the relationship between quality, consistency, and the people delivering it every day.

Building KIRN

Category 04

Building KIRN

KIRN was founded by Fabio and Tom — two coffee professionals with over a decade of combined experience — on a shared belief that great coffee should feel effortless, and that behind every effortless thing is a lot of quiet, disciplined work. What began as a conversation about quality has grown into something with real range: wholesale partnerships, premium event hospitality, equipment supply, and a direct-to-consumer offering built around freshness and traceability.

In this category, we write honestly about the business we're building — the decisions we're facing, the things that are working, and where we're taking KIRN next. We're still early, and there's a lot still to do. Building in public feels like the right way to go about it.

In the Field

In the Field

Coffee doesn't stay in the roastery. We work at Formula One circuits, brand activations, fashion events, and private gatherings — anywhere that places genuine demands on what we do. As coffee partner to the Aston Martin Aramco Formula One Team across the European race calendar, we've learned what it means to deliver a specialty standard under conditions that leave no room for inconsistency. That experience has made us significantly better at everything else we do.

Beyond the paddock, we've delivered coffee services for New Balance and Reebok during London Marathon activations and collaborated with Land Rover across brand experience events. In this category, we document where KIRN travels — what we served, what the environment demanded, and what we brought back to the roastery.
